Key Ingredients

Here’s why each ingredient plays a key role in making this casserole rich, cheesy, and delicious:

  • Ground Beef – The hearty base of the casserole, ground beef provides protein and a satisfying, meaty texture. Using an 80/20 blend adds great flavor while keeping the dish juicy.
  • Onion – Adds a slight sweetness and depth of flavor to balance the savory beef. Using a small amount keeps it keto-friendly while enhancing the overall taste.
  • Garlic Cloves – Fresh garlic infuses the casserole with rich, aromatic flavor, making each bite more delicious.
  • Worcestershire Sauce – A key ingredient for that classic burger taste, Worcestershire sauce adds a touch of tang, and enhances the beefy richness.
  • Cream Cheese – Makes the casserole ultra-creamy, helping to create a smooth, velvety texture.
  • Eggs – Acts as a binder to hold everything together while adding structure and fluffiness to the casserole.
  • Mustard – A classic burger ingredient, mustard brings a tangy kick that balances the richness of the meat and cheese.
  • Heavy Whipping Cream – Adds richness and a creamy texture while keeping the casserole moist and indulgent. It also helps blend the flavors together.
  • Shredded Cheese – A staple for any cheeseburger-inspired dish, cheddar cheese melts beautifully, adding gooey, cheesy goodness to every bite.
  • Burger Seasoning – A flavorful blend of spices that enhances the beef with classic burger flavors, including hints of smokiness and spice.
  • Salt and Pepper (to taste) – Essential for seasoning and balancing all the flavors in the dish.
  • Bacon – Crispy, smoky bacon takes this casserole to the next level, giving it extra crunch and a bold, savory taste that pairs perfectly with the cheeseburger theme.
  • Pickles – A game-changer! Chopped pickles or pickle slices makes the casserole taste just like a loaded cheeseburger.

Substitutions, Variations, and Add-In Ideas

  • Ground Turkey, Ground Chicken, or Ground Pork – Swap for a leaner option or change up the flavor profile while keeping it keto-friendly.
  • Green Onions
  • Coconut Aminos or Soy Sauce – Coconut aminos offer a slightly sweeter taste, while soy sauce provides a similar umami depth.
  • Sour Cream or Greek Yogurt – Equal parts can be used to replace cream cheese. Both add creaminess with a slightly tangy twist.
  • Dijon Mustard or Spicy Brown Mustard – For a bolder, tangier kick.
  • Pepper Jack, Colby Jack, or Gouda – Any melty cheese will work, so choose based on your flavor preference.
  • Turkey Bacon or Pancetta – Use turkey bacon for a leaner option or pancetta for a richer, saltier taste.
  • Pickled Jalapeños or Banana Peppers – For a spicier, tangy twist.
  • Diced Tomatoes (or Ro-Tel) – For a Tex-Mex twist with extra flavor.
  • Jalapeños or Red Pepper Flakes – Adds a spicy kick!
  • Chopped Mushrooms – Gives a meaty texture while keeping it low-carb.
  • Crumbled Cooked Sausage – A great way to mix in more protein and flavor.
  • Avocado Slices – Add on top after baking for extra flavor.
  • Ranch Seasoning – A fun way to add a creamy, herby flavor.
  • Crushed Pork Rinds – Sprinkle on top for extra crunch, mimicking a burger bun texture.

I am new to this so i may be missing something but here goes. I thought eating Keto was among other things, eliminating sugar from your diet. Ibhave the Weber seasoning and the second ingredient listed is sugar. Am I mistaken?

You can substitute the seasoning for something else if you wish. I personally focus more on keto macros and this seasoning is in line.

I always make my own seasoning mixes. Just look at the other spices/herbs included in the already mixed version and mix up a few of your own, skipping the sugar.

I have a baby and like to “prep” while she’s sleeping so that when my husband gets home I can just throw it in the oven. Unfortunately life doesn’t let me be in the kitchen very long uninterrupted.

You could pre-cook the bacon and complete step two. Those were the things that took me the longest anyway. Once he gets home, you could assemble and bake. Once I cooked the bacon and beef it only took me 5-10 minutes to do everything else.

Good recipe, but there is absolutely no way for bacon to cool at 350 for 20 minutes and be cooked. Bacon should be cooked at least partially before adding.

This one of my favorite new recipes. I live alone so this gives me plenty to freeze and have for lunches or those nights that I only have 10 min. to eat and run. I added a sliced tomato before the last layer of cheese. Hope that doesn't throw too many more carbs to the dish. Love this!

It depends on if you need to or not. I used beef that didn't need draining. If yours does, then drain it. Use your judgment.

This was so good... Made this Cheeseburger Casserole tonight for dinner. It did take me a little longer than 30 minutes, but the taste was well worth it. The only changes I made was to add pepper jack cheese in addition to the cheddar, and also added cauliflower rice (as another reviewer posted). I paired this with some garlic broccoli and my boyfriend loved it. Will def make this again.

Last week a friend told me she makes it with bagged cauliflower, by putting the florets in the oven and roasting them first and using them on the bottom of the dish. It makes it more like Sheppard’s pie. More filling with them added and just as good. I make this at least once a week.

This came out delicious! Followed the recipe exactly. Super easy and lots of leftovers. I saw some comment it was too much cheese. When can you ever have too
much cheese? Less would have been dry. And others said “too long to make” No longer than any other meal in fact I felt it was shorter than typical meals on the stove or oven..thank you for a low carb recipe!

This was my first recipe to try on the Stay Snatched site. It has become a staple in our household since! And so had Stay Snatched!

I always add extra pickles because my husband and I are pickle fanatics. Sometimes I’ll sub in real bacon bits instead to save time. I usually skip the hamburger seasoning and don’t feel like I am missing out on anything. This reheats very nicely and is great for food prep.

I’ve tried several different recipes for bacon cheeseburger casserole and this is by far my favorite! It’s so freaking good! I added some chopped jalapeños in with the onions for a little kick and more than doubled the bacon because, well, it’s bacon. Lol. Thanks for a great recipe!

This looks fantastic! Do you know if this can be cooked and then portions frozen to be eaten at a later date? I'm having surgery in a couple of days and looking for some keto-friendly meals I can pre-cook and freeze for easy post-surgery eating.

Dairy separates when frozen. If you don't mind that, then you can.

So so good! The only thing I changed was that I omitted the bacon; because frankly, I’m baconed out. I paired it with a cauliflower “potato” salad and it was like a keto cookout.

This was a hit with my two kids and husband. Everyone’s plates were scrapped clean. Thanks for the recipe—I felt that I won dinner last night. I added a little sugar-free ketchup on top of the beef before adding the crumbled bacon. I cooked the bacon and shredded my cheese in the morning, so dinner prep was a breeze. My husband and I had this with kale chips as a side and kids had some oven baked French fries. The cheese amounts were perfect. Delicious.

Made this today and it was absolutely amazing! It was easy and quick to make 🙂 I always have bacon ready to eat, so that definitely saved some time. It was nice that the ingredients are so common. I didn't have to run to the store! Awesome recipe, will be making it again!

This dish was so good and so easy to make! I was running short on time and didn't include the suggested add ons, but will definitely make this again and try the lettuce, mushrooms, and guac. I didn't have white cheddar so I substituted pepper jack and that gave it a nice kick! Not 100% the same taste, but to me this was reminiscent of a Big Mac. Was a big hit with my husband and it reheated well in the microwave for our lunches the next day. This one is going into my binder of go-to recipes!

Really good and just the right amount of cheese. I used Ted's Montana Grill Seasoning Mix. It's not sold in stores but you can Google it. We keep a jar in the pantry and are always making more to replenish.

We LOVED this dinner! I had almost everything on hand. No burger seasoning, so I used Trader Joe's 21 Seasoning Salute. I don't even know what white cheddar is (I don't know much about cheese), so I shredded some Kerrygold Dubliner that I had (maybe that is white cheddar; I don't know, but it worked). Also, I added some spinach. Used extra bacon and extra pickles. SO GOOD. My husband couldn't stop raving about it! He misses having burgers!!! Thanks for the recipe!!

It s more than likely a 9 13 with 2 pounds of meat. That s what I used .. And just to add flavor, I used the low sodium, low carb can of Rotel tomato s. I like that better than salsa and it s not as much sodium.

During the quarantine I have been trying new recipes, I believe this is my 3rd-4th recipe of Brandi’s that I’ve tried, and I was not disappointed. I was craving a burger and this hit the spot. I feel like if there’s anything you crave, you can just come to Brandi’s website and find what you want, I guarantee it. My husband who isn’t on the journey of losing weight like I am, even enjoyed it. He was able to make it his own and eat his with bread, just as you would with a “normal” burger. I’ll definitely be making this again. It was not labor intensive for me. As a person who dislikes cooking, the instructions were detailed and easy to follow. The leftovers were even better on the 2nd day.

I made this and followed the directions exactly. It was so disgusting. Even my boyfriend who eats everything hates it. The meat had a very strange taste, I’m guessing it was the Worcestershire sauce? I’m not sure. But this was a major letdown

It sounds like you had bad or spoiled meat. Worcestershire sauce is used in homemade burgers, restaurant burgers, meatloaf, etc. You are the only person to ever say this.

Absolutely loved this!! I had a larger casserole dish (9x13) than what was recommended and just added a little less than 1/4 c of egg whites to the liquid mixture to fill it out and that turned out perfectly. I also just served it with a little lettuce and tomato like a cheeseburger salad and it satisfied all the luxury cheeseburger cravings! Even my picky toddler enjoyed this recipe.

Oh man this was so good. Excellent flavor, the only thing I’d change is I’d cook the onions first and caramelize them next time before adding the beef. That’s just a textural thing for me. Otherwise it was delicious. Husband said to add it to our rotation.
