Air Fryer Homemade Strawberry Pop Tarts may be my best invention yet! I am sure most of you remember Pop Tarts. Heck, some of you may still eat Pop Tarts, or feed them to your children. I have very fond memories from my childhood that involve Pop Tarts. For some reason, my mom frequently purchased the cinnamon flavored kind. I don’t have anything against cinnamon, but the strawberry flavor tasted so much better to a child!

In the early days, I would pop one in the toaster right before it was time to leave to school. On the mornings I was pressed for time, I recall using the microwave because it only took 15 seconds. This is not the same experience, but it did the trick.
Here is the unfortunate news about Pop Tarts. Pop Tarts have ingredients like corn syrup, fructose, and dextrose (added sugar). The box may brag that they are baked with real fruit, but only 10% of the filling is related to real fruit. They may not be what you want to feed to your children, or consume yourself.
This is why I love this day and age. We can make our own treats at home, and still enjoy them just the same! Let me repeat that again. We can make our own treats at home! I love having the ability to control the ingredients used for treats that I prepared at home.
I made my own frosting for the pop tarts using non-fat, plain Greek yogurt and reduced-fat cream cheese. I am in love with this combination! I have used it in other recipes as well. Be sure to check out my Red Velvet Cupcakes, too!

Air Fryer Homemade Strawberry Pop Tarts
Air Fryer Homemade Strawberry Pop Tarts is a quick and easy healthy recipe with refined sugar-free frosting using reduced-fat cream cheese, vanilla Greek yogurt, and stevia. A kid-friendly recipe that is great for adults, too!
- 2 refrigerated pie crusts I used Pillsbury
- 1 tsp cornstarch
- 1/3 cup low-sugar strawberry preserves I used Smucker's
- 1/2 cup plain, non-fat vanilla Greek yogurt
- 1 oz reduced-fat Philadelphia cream cheese
- 1 tsp sugar sprinkles
- 1 tsp stevia
- olive oil or coconut oil spray
Lay the pie crust on a flat working surface. I used a bamboo cutting board.
Using a knife or pizza cutter, cut the 2 pie crusts into 6 rectangles (3 from each pie crust). Each should be fairly long in length as you will fold it over to close the pop tart.
Add the preserves and cornstarch to a bowl and mix well.
Add a tablespoon of the preserves to the crust. Place the preserves in the upper area of the crust.
Fold each over to close the pop tarts.
Using a fork, make imprints in each of the pop tarts, to create vertical and horizontal lines along the edges.
Place the pop tarts in the Air Fryer. Spray with oil. I prefer to use olive oil.
Cook on 375 degrees for 10 minutes. You may want to check in on the Pop Tarts around 8 minutes to ensure they aren't too crisp for your liking.
Combine the Greek yogurt, cream cheese, and stevia in a bowl to create the frosting.
Allow the Pop Tarts to cool before removing them from the Air Fryer. This is important. If you do not allow them to cool, they may break.
Remove the pop tarts from the Air Fryer. Top each with the frosting. Sprinkle sugar sprinkles throughout.
I recommend cooking 2-3 Pop Tarts at a time in the Air Fryer. You can stack them, and they should pull apart just fine once they have fully cooled. However, to ensure presentation, not stacking them works best.
