Ingredients
  

  • 1 pound ground beef
  • 1 cup onion chopped
  • 2 garlic cloves minced
  • 1 teaspoon worcestershire sauce
  • 2 oz cream cheese
  • 2 eggs
  • 1-2 tablespoons mustard I used 1 tablespoon
  • ½ cup heavy whipping cream
  • 1 cup shredded cheddar cheese divided
  • 1 cup shredded white cheddar cheese divided
  • 1 teaspoon Burger Seasoning I like Weber Burger Seasoning or McCormick's Grill Mates Burger Seasoning
  • salt and pepper to taste
  • 3 slices bacon cooked and crumbled, add more if you like!
  • 1 kosher pickle, cut into pieces Add more pickles if you are a pickle lover!

Instructions
 

  • Preheat oven to 350 degrees.
  • Place the ground beef in a skillet over medium-high heat. Add the garlic, onions, burger seasoning, and salt and pepper to taste. Using a spatula, break the ground beef into chunks. 
  • Add the worcestershire sauce and cream cheese. Cook until the ground beef is no longer pink and the cream cheese has melted.
  • Remove the skillet from heat.
  • In a medium bowl, combine the eggs,  ½ cup shredded cheddar cheese, ½ cup shredded white cheddar cheese, heavy cream, and mustard.
  • Spray an 8 x 11 or 9x9 baking dish (I used 8 x11) with oil or cooking spray. Pour the ground beef mixture into the dish. Sprinkle the bacon and sliced pickles throughout.
  • Drizzle the liquid mixture on top.
  • Sprinkle the remaining ½ cup shredded cheddar and ½ cup shredded white cheddar cheese on top.
  • Bake for 15-20 minutes or until the cheese begins to bubble. Mine was ready around 17.
  • Cool before serving.

Feel free to add your favorite keto friendly burger toppings. Mushrooms and guac will work well.
If you do not use Butcher Box beef and your beef produces excess oil, drain the oil prior to baking.

    Mine came out way too greasy as it did not say to drain the hamburger before adding the cream cheese.i had tripled the recipe because I wanted to make a big one. Don't know if we wil be able to eat it this greasy.

      The notes to this recipe state that if you use fatty beef you should drain excess fat. In general, I recommend you get in the habit of draining excess fat from your beef while cooking.

    I loved making this recipe. My husband I love the cheeseburger soup but in the summer I wanted a new option. The addition of the bacon and pickles make it really feel like you are eating a bacon cheeseburger without the bread. I served this with a salad on the side. I doubled the recipe so that there would be leftovers.

    Very tasty and easy recipe. I ended up making my own burger seasoning from a recipe online as I saw the McCormick one had sugar in the ingredients (store didn't have the Weber version). I used a brown sugar sub in the seasoning mixture instead. Great stuff! I'll definitely make again and got my burger fix. Thank you!

      No, that isn't normal. That's never happened to me. You should use heavy whipping cream, not whipped cream.

    When I say the whole family loved this recipe, I mean the WHOLE family. (My husband is in the kitchen scraping the empty pan as we speak) ha! I needed something keto/low carb, quick and easy that even the kids would eat. This was a winner and I will be making again. (I subbed the heavy cream for half and half because it's all I had.)

    I love the way this one is made, so much more flavor. DH and I loved ours straight from the pan, the kids put theirs on bread and ate it like a sandwich. This will be in our rotation for sure!

    So tasty and easy to make. We serve it with the pickles on the side, to accommodate family tastes. Kids will also top it with ketchup, but it definitely doesn’t need it.

    We love this recipe and have been making it for a few years now. Can it be cooked then frozen? Has anyone successfully cooked, frozen, defrosted, then served? I am open to all advice!

      You can freeze just about anything. Dairy separates when you reheat it so keep that in mind.

    I have never left a comment on a recipe before but this casserole f’in SLAPS. I made it for lunch last week and was so excited to eat lunch every day. Great balance of flavors and spices. Amazing for keto. More keto recipes please! Fan for life over here. ☺️
