I’ve been making low-carb recipes for years, and I already know the quickest way to ruin a chaffle is to make it taste like straight-up eggs with a little sweetener thrown in. These Cinnamon Roll Chaffles give you that warm cinnamon flavor and sweet icing you’re looking for while keeping the texture crisp around the edges and soft in the center. It’s one of those breakfasts that makes eating low carb feel a whole lot less like you’re missing out.

Cinnamon Chaffle Ingredients

Cinnamon Roll Chaffles
Ingredients
- 1 egg
- ½ cup shredded mozzarella cheese
- 2 tablespoons sweetener
- ½ teaspoon vanilla
- ½ teaspoon ground cinnamon
Instructions
- Add the egg to a bowl and beat. Add in the remaining ingredients and mix well.
- Plug in the waffle iron and grease the iron with oil or butter.
- When hot, add the batter and close the iron.
- I let my waffles cook until the indicator light on the iron said they were finished. This was about 2 - 2 ½ minutes. Your timing may vary depending on the iron you use.
- Carefully remove the waffle from the iron. I like to use a spatula because the waffles are really soft to touch initially.
- Let the waffles stand for 2-3 minutes. They will firm up.

Notes
- Makes 1 large waffle or 2 small waffles.
- If you are using a mini waffle iron, divide the batter in half to make 2 waffles.
- You may have batter leak out of the waffle iron. This usually happened to me if I tried to evenly spread the batter throughout the iron myself. Focus on spreading it in the middle of the iron and not along the edges. When you close the iron the batter will fill out on its own.
- I have tested the recipe using granular sweetener and Confectioner's Sweetener. Both worked fine.
- If you do not sweeten chaffles, in my opinion, they taste really savory. I also think that by making them the standard way with just egg and mozzarella, I taste the egg a lot more.
- I tested the recipe using 1 tablespoon of sweetener, and felt like the chaffles tasted eggy. Feel free to adjust to your taste and preference.
- You can freeze the chaffles. They may soften when you defrost. You can try crisping them in a toaster.

Frequently Asked Questions and Recipe Pro Tips
Everyone is talking about chaffles. Chaffles are the easiest way to make low carb waffles. Chaffles remind me a lot of fathead dough recipes, like my Keto Low Carb Cinnamon Rolls, Keto Low Carb Alfredo Chicken Pizza, and Keto Low Carb Pepperoni Pizza.
You will need an egg and mozzarella to make waffle batter.
When heated in a waffle iron, a gorgeous waffle is produced. What's great is this method will even work for sweet recipes. Mozzarella cheese is all about texture. It has very little flavor. That's why your waffles won't taste like cheese! Unless you use flavored cheese, like cheddar.
If you do not sweeten them, in my opinion, they taste really savory. I also think that by making them the standard way with just egg and mozzarella, I taste the egg a lot more.
Properly blending the egg will help prevent this, but I like the chaffles a lot more with sweetener. They will make a great substitute for bread and buns in savory recipes.
I didn't want to buy a new waffle iron, so I used my Belgian waffle maker I have had for years.
A lot of people have been using the Dash Mini Waffle Maker to make chaffles. If you don't have a waffle iron this may make a good option because they are really cheap on Amazon.

Adding to my breakfast rotation. I accidentally used pumpkin spice but it was still good with the cinnamon. I used choc zero maple pecan syrup and some cool whip but honestly didn’t really need to. It’s good “as is” with my turkey bacon and Americano.

Glad you enjoyed it.

My first try and they were delicious. Is there a way to make the outside a little crispier? Maybe I should cook longer?
staysnatched says
Yup, you can try that.

These were the bomb! I've been wanting something sweet! This did not disappoint! I always add a little shredded cheese onto my Dash iron and let it sizzle before pouring mix. Then I let it cook for 15 seconds, add shredded cheese to the top of the mix before closing the Dash lid. The cheese on the iron helps to crisp up whatever you're making. When they were done, I added about 1 TLB Choc-Zero Caramel syrup to my waffles while hot. Crispy and chewy. So good! Mine made 3 Chaffles due to the cheese I added to the iron.
