When I first switched to a healthy lifestyle Protein Donuts were one of the first recipes I created. I wanted a quick way to get in a nice dose of protein, that also tasted amazing. Growing up my favorite donuts were always the old-fashioned sour cream donuts with glaze.  This recipe is to cater to the sweet tooth. These carb-free donuts are also great for meal prep.

  2. Combine butter, cream cheese, almond milk, eggs, and vanilla in a separate bowl.

  4. Spray a donut pan with cooking spray and add the batter.
  5. Bake for 22-25 minutes.

How to Store the Donuts

I like to store the keto donuts in the fridge in an airtight container. You can store them on a counter, but they may get soggy faster, so I recommend the refrigerator.

How Long Will the Donuts Last?

The donuts will last for 3-4 days. Store the donuts in an airtight container or bag in the fridge.

How to Convert All-Purpose Flour into Servings for Almond Flour

I get this question often.  Almond flour and all-purpose have 1:2 ratio, ¾ cup all-purpose flour = 1 ½ cups almond flour. Always cook almond flour at a lower temperature.

This is an approximation. You can read more about How to Convert All Purpose Flour to Almond Flour here.

Can You Substitute Coconut Flour in this Recipe?

No, coconut flour is not interchangeable. It absorbs moisture much differently than almond flour.

Donut Substitutes

You can make these donuts into chocolate donuts, cinnamon and sugar donuts, or even donut holes. To make chocolate donuts, I recommend melting a portion of a Lily's Chocolate bar. Lily's is low in carbs and will work great for this recipe.

Equipment

  • Donut Pan
  • sili

Ingredients

Wet Ingredients

  • 2 tablespoons unsalted butter (melted)
  • 2 eggs (beaten)
  • 2 oz cream cheese (softened)
  • ¼ cup unsweetened almond milk
  • 1 teaspoon vanilla

Dry Ingredients

  • 1 cup almond flour (blanched)
  • ⅓ cup sweetener Use discount code STAYSNATCHED for savings
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon ground nutmeg

Glaze Ingredients

  • ¼ cup heavy whipping cream
  • 1 cup powdered sweetener Use discount code STAYSNATCHED for savings
  • ½ teaspoon vanilla

Other

  • cooking oil (olive or coconut)

Instructions

Mixing and Assembly

  • Preheat oven to 350 degrees.
  • Spray donut pan with cooking oil. I like to use olive oil or coconut oil.
  • Combine all of the wet ingredients in a mixing bowl and stir. If you have trouble getting the cream cheese to soften up, use a hand mixer for about 20-30 seconds.
  • Combine the dry ingredients in a separate small bowl and stir. Add the dry ingredients to the wet ingredients. Stir well to combine.
  • Spoon the mixture evenly throughout the donut pan. The batter will make 6 donuts.
  • Bake the donuts for 20-25 minutes until golden brown. Mine took about 22 minutes. While the donuts bake, make the glaze.

Frosted Glaze

  • Combine the whipping cream, confectioner's sweetener, and vanilla in a small bowl. Mix until combined and glaze forms.

Cooling and Frosting

  • Remove the donuts from the oven and allow them to cool in the pan for about 5 minutes.
  • Remove the donuts from the donut pan and place them on a cooling rack for at least 10 minutes.
  • Frost the donuts with the glaze. Make sure the donuts have completely cooled and handle the donuts with a light hand to prevent them from breaking as you frost.

Video

Notes

These donuts are a sweet treat, so if you aren't fond of sweet desserts, start with ½ of the amount listed above for the frosted glaze. Test it out and decide if you want more glaze.
