What is a Breakfast Salad?

When I first established a realistic goal to eat more vegetables, I switched up my breakfast routine and added a salad to the meal. Breakfast doesn’t have to be loaded with sugar and piled high with pancakes, waffles, and French toast.

Breakfast is simply the meal you eat in the morning and it can be anything. In fact, the meaning of breakfast is to “break the fast.” It’s the meal that breaks the fast from the previous/night day.

In order for me to meet my veggies goal and for it to be realistic I added salads to my morning routine because that way, if anything comes up throughout the day, that throws off my routine (the need to order takeout because I’m too tired to cook, last minute dinner plans, etc), I’ve already accomplished most of the goal with the first meal.

This mindset is also what I apply to my morning workouts. It’s always best for me to get it done first thing and out of the way.

What Type of Salad Dressing to Use

This salad is versatile and any dressing you like will work. I like to pair it with the Dreamy Italian Dressing from Primal Kitchen. The flavor pairs wonderfully with the bacon and strawberries.

How to Make Salad Ahead of Time

Greens and produce will become bad due to moisture. If you want to keep your produce alive and crisp you will need to make sure it’s fully dried, not damp and stored in an air-tight container. These mason jars work great.

Always store your dressings separate from the produce. These portable salad dressing containers work great.

Iโ€™ve been looking for ways to get more veggies and fruits into my daily meals and this is perfect! Bacon, eggs and all the good stuff. Itโ€™s also easy to make swaps or use different produce (I like adding some avocado or chickpeas) you can also make whatever kind of eggs you like to make it your own. Quick and delicious!
