Those shrimp and zoodles look absolutely amazing! And you’re right – zucchini is WAY more friendly to my summer body goals than our usual pasta. Pinned!

I’m always looking for ways to substitute carbs wherever I can and spaghetti squash and zucchini noodles are my favorite pasta substitutes. Unfortunately, we moved into what was supposed to be a temporary home (which turned out to be less temporary) & my spiralyzer was placed into storage since I though I would only be without it 2 months. The good news is I noticed that the grocery stores are now carrying zucchini noodles so I don’t have to wait until I move again to enjoy them. Loving how you topped yours with these Greek Inspired shrimp.

I’ve seen the ready made zucchini noodles at my local grocer as well! That makes it an even easier recipe!

I am all for fewer carbs and my son would love it for the black olives. This makes it a win -win kind of food.
