This Instant Pot Corned Beef and Cabbage is made right in your pressure cooker and is perfect for St. Patrick's Day celebrations or just a classic meal. This beef brisket is served tender with delicious vegetables.

What is Corned Beef

Are corned beef and brisket the same thing? The short answer is no. Corned beef is brisket that is cured/brined/seasoned first. Corned beef is also used in Reuben sandwiches. Traditional brisket looks like a huge roast and is generally smoked.

Why is it Eaten on St. Patrick's Day?

According to the Kitchn and Why We Eat Corned Beef on St. Patty's Day, years ago, the newly immigrated Irish to the US were used to eating salt pork back at home, its nearest counterpart, bacon, was prohibitively expensive in the U.S. Corned beef was much cheaper.

It was paired with cabbage and potatoes because, again, CHEAP!

Where to Buy Corned Beef

I purchased my corned beef at Costco. This is usually my go-to spot for large cuts of meat. Costco will usually only have it around St. Patrick's Day, so during other times of the year you may have head to a local butcher or ask your local store if they carry it.

Do You Rinse it Before Cooking?

I don't rinse the corned beef. Many do because the meat has been brined in salt. Rinsing it first will remove any excess salt. The meat has been cured with salt so if you do choose to rinse it, that should not remove the flavor.

How to Make Instant Pot Corned Beef

  1. Place the trivet in the Instant Pot.
  2. Add the corned beef, chicken stock, and garlic to the pot.
  3. Place the lid on the Instant Pot and seal. Pressure Cook.
  4. Keep the liquid from the beef in the pot. Add the sliced onions, carrots, and cabbage to the pot. Cook for 5 minutes on Manual > High-Pressure cooking.
  5. Quick-release the steam when the pot indicates it is finished.
  6. Serve the corned beef with the cabbage and carrots.

How Long to Cook

Cook the beef for 90 minutes with a 10 minute natural release of steam.

Do You Put it in the Pot Fat Side Up or Down?

Typically you will find this doesn't matter. The fat will run throughout both sides of the meat.

Texture/Is it Tender?

Brisket is a tough cut of meat if it isn't cooked long and slow or in a pressure cooker. When cooking meat in the Instant Pot, you should always allow for a natural release of steam. Do not quick release. A quick release will result in tough meat.

Ingredients
  

  • 3-4 pound corned beef brisket
  • 1 head green cabbage chopped into 5-6 chunks
  • 3 cups baby carrots
  • 2-3 cups low-sodium chicken stock I used 3
  • 2-3 garlic cloves chopped
  • ½ onion sliced

Instructions
 

  • Place the trivet in the Instant Pot. This is the metal component that comes with the Instant Pot
  • Add the corned beef, chicken stock, and garlic to the pot.
  • Place the lid on the Instant Pot and seal. Cook for 90 minutes on Manual > High-Pressure Cooking.
  • Do not perform a quick release when the Instant Pot indicates it is finished. Allow the steam to release naturally for 10 minutes.
  • Release the steam. Open the pot and remove the beef. Set aside.
  • Keep the liquid from the beef in the pot. Add the sliced onions, carrots and cabbage to the pot. Cook for 5 minutes on Manual > High-Pressure cooking.
  • Quick release the steam when the pot indicates it is finished.
  • Serve the corned beef with the cabbage and carrots.

You can also pair red potatoes with this recipe.
I did not use the seasoning packet that came with the corned beef. You are welcome to use it, but the ingredients above provide immense flavor since the beef is already brined.

    I grew up on a pressure cooker – chicken and potatoes was often the meal my mom would make. Received my first cooker of my own in my 20’s and I’ve been using one ever since! I now have one that is stainless steel so it’s easier to clean than the old Presto model – it also has an easy release button to vent the steam when done.

    I wasn't sure as to how well I was going to like the instant pot but, I have been reviewing more and more of your recipes and I am going to like this way of cooking for some time to come. Now if they could only do a bigger pot for us to do Maryland Steam Crabs then....I would be in heaven!

    Up until last year, I didn't even like corned beef. This year I thought I'd give it another shot and tried Brandi's recipe. Like all of her recipes, the instant pot corned beef turned out absolutely perfect and was both simple and easy. I am now a corned beef lover!     Made this for St Patrick's Day. I had a smaller brisket (about 2 lbs) and smoked it for 3 hours beforehand. Cut the cooking time by about 20 minutes since it was smaller but followed everything else and it turned out great!

    Thank you for this recipe! It’s so insanely easy and the corned beef came out perfectly! I did a flat cut and a point cut at the same time and both were super tender and moist. The weight between the two was closer to 5 pounds and it still worked great! I tried it with Savoy cabbage just to see and it was a little mushy, but that’s on me since it’s thinner leaves. Probably best to stick with the green cabbage in the recipe. Lol Can’t wait to use the recipe again! Thanks!

    I've had an InstaPot for a while, but could never figure out what to try to make in it first. Finally, I pulled the trigger and tried the corned beef recipe. This was DELICIOUS!
