Corned beef and cabbage is one of those classic comfort meals that looks like it took all day, but the Instant Pot makes it way easier. You still get tender corned beef, flavorful broth, and perfectly cooked cabbage without hovering over the stove for hours. I’ve been sharing comfort food recipes for over a decade, and I’m all about methods that keep the flavor but simplify the process. This Instant Pot corned beef and cabbage gives you corned beef that’s tender and easy to slice, with cabbage and vegetables that soak up all that flavor.

Place the trivet in the Instant Pot. This is the metal component that comes with the Instant Pot
Add the corned beef, chicken stock, and garlic to the pot.
Place the lid on the Instant Pot and seal. Cook for 90 minutes on Manual > High-Pressure Cooking.
Do not perform a quick release when the Instant Pot indicates it is finished. Allow the steam to release naturally for 10 minutes.
Release the steam. Open the pot and remove the beef. Set aside.
Keep the liquid from the beef in the pot. Add the sliced onions, carrots and cabbage to the pot. Cook for 5 minutes on Manual > High-Pressure cooking.
Quick release the steam when the pot indicates it is finished.
Serve the corned beef with the cabbage and carrots.

You can also pair red potatoes with this recipe.I did not use the seasoning packet that came with the corned beef. You are welcome to use it, but the ingredients above provide immense flavor since the beef is already brined.
