Listen, the turkey might be the star of the holiday table, but everybody knows the gravy ties the whole plate together. Those turkey drippings, that's liquid gold right there, and it’s the base for the richest, most flavorful gravy you’ll ever make. I’ve been testing and sharing recipes long enough to know folks get nervous about gravy: too thick, too thin, lumpy, but trust me, I’ve got the steps lined up so yours comes out smooth and perfect every single time.

Here's the Tea From Brandi

I will let you in on the secrets to good gravy. You need to start with high-quality pan drippings from your roasted turkey. These drippings contain the essence of the bird's flavor, so make sure to use a roasting pan with a rack to collect them. You can collect them in a Crockpot, too if you're using a slow cooker.

You will need flour as a thickening agent. And of course, the roux! Create a roux by cooking it in olive oil, butter, and pan drippings. This adds a rich, nutty flavor to the gravy. Gradual whisking is key. This prevents clumps and ensures even thickening. As always, season to taste. No one is looking for bland gravy.

Turkey Gravy From Drippings Ingredients

  • Turkey Pan Drippings
  • Unsalted Butter
  • Olive Oil
  • Flour
  • Salt and Pepper

How to Make Turkey Gravy From Drippings

Detailed measurements and full instructions can be found in the recipe card at the bottom of this post.

  1. Collect the Turkey Drippings: Once the turkey is finished cooking, remove it from the roasting pan and set it aside to rest. Pour the drippings from the pan into a measuring cup. Keep the remaining flavorful pan juices as well.
  2. Make the Roux: Add butter to a pan or saucepan over medium heat. Sprinkle in flour and whisk until smooth. Cook for 1-2 minutes, whisking constantly, to cook out the raw flour taste.
  3. Add the Drippings: Slowly pour the reserved turkey drippings into the roux while whisking constantly. Adding the liquid gradually will help keep the gravy smooth and prevent lumps.
  4. Add Broth as Needed: Add turkey or chicken broth. Continue whisking until everything is smooth and combined.
  5. Simmer the Gravy: Bring the gravy to a gentle simmer and cook until it thickens to your desired consistency. Stir or whisk frequently so nothing sticks to the bottom of the pan.
  6. Season to Taste: Taste the gravy before adding salt because turkey drippings can already be pretty salty. Add salt, pepper, and any additional seasonings you like.
  7. Adjust the Consistency and Serve: If the gravy is too thick, whisk in a little more broth. If it’s too thin, let it simmer a little longer. Serve warm over turkey, mashed potatoes, stuffing, or your favorite holiday sides.

Ingredients
  

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil Butter can be substituted.
  • ¼ cup all-purpose flour
  • 1-2 cups broth or stock Any broth will work.
  • turkey drippings from pan
  • salt and pepper to taste

Instructions
 

  • Heat a saucepan or skillet on medium heat. Add the butter and olive oil.
  • When melted, add in the flour. Add it in stages and stir continuously to avoid clumping. This will create a roux, which will thicken the gravy.
  • Add in 1 cup of broth and the turkey drippings from the pan. Stir until the gravy begins to thicken. If the gravy is too thick, add additional broth. Stir (and continue to add broth) until the gravy reaches your desired consistency.
  • Taste repeatedly and add salt and pepper to taste as needed.

What are turkey drippings?

Drippings are the leftover juices and fat that remain in the pan or pot after the meat has been fully cooked. The drippings are loaded with flavor from the seasoning of the meat and often used as a base for sauce or gravy.

Do I need to strain the drippings?

This will depend on a couple of factors. When I make turkey in a Crockpot or slow cooker, the turkey is cooked in broth and usually onions as well. I don't strain anything, everything that is leftover in the slow cooker can go into the gravy.

If you roasted or smoked your turkey with only a small amount of broth or water, it may not have been enough to create drippings that are mostly liquid. In this instance, you may need to stain them in order to make gravy that is smooth.

What's the best way to season turkey gravy?

I wait until the drippings, butter, and flour are combined to add any additional seasoning or spices. Because turkey drippings are used as a base for the recipe, they will have plenty of flavor. You may find you don't need to add much to zest up the gravy.

I often find I need a little salt and pepper to taste.

How do I thicken the gravy.

A butter and flour roux will create a nice and thick gravy. I like to add my broth and turkey drippings in slowly until I get the consistency of gravy I am looking for. Less broth will keep it thick.

If you find it still isn't thick enough, Use a flour slurry. Whisk 1 tablespoon of flour with 1 tablespoon of cold water or broth until completely smooth. Slowly whisk it into the simmering gravy, then cook for several minutes so you don't end up with a raw flour taste.

Is it better to use cornstarch or flour?

Gravy thickened with flour is always my preference. It gives you that rich, creamy gravy with a smooth, opaque finish that just looks and tastes like gravy is supposed to, honey. I make a roux by cooking the flour with fat first, which gets rid of that raw flour taste and adds another layer of flavor before the drippings and broth ever hit the pan.

Cornstarch works a little differently. It gives you a gravy that’s lighter, glossier, and more translucent, so if that’s the texture you prefer, go with it. Just don’t dump cornstarch straight into those hot drippings unless you want to be fighting lumps. Mix it with cold water first to make a smooth slurry, then whisk it into the drippings and broth.

There’s no roux involved when you use cornstarch, so it's a completely different method. Combine equal parts cornstarch and cold water, whisk until completely smooth, and then gradually add the slurry to the gravy until it thickens the way you want.

How do I thin out the gravy, it's too thick?

Thick gravy can be smoothed out by adding additional broth or stock to the pot.

What color is the gravy? Should it be yellow or brown?

The color of the gravy will vary based on what spices were used to season the turkey. How you cooked the turkey may alter the color of the gravy too. A deep brown turkey, such as a roasted one, will yield darker gravy than something that was cooked in a Crockpot or slow cooker for example.

How to Store it/How Long it Will Last

Store the gravy tightly covered and sealed for 3-4 days.

Freezer Tips

You can freeze leftover gravy covered and tightly sealed for up to 6 months.
