How to Make Turkey Gravy From Drippings

Those turkey drippings, that's liquid gold right there, and it’s the base for the richest, most flavorful gravy you’ll ever make. I’ve been testing and sharing recipes long enough to know folks get nervous about gravy: too thick, too thin, lumpy, but trust me, I’ve got the steps lined up so yours comes out smooth and perfect every single time.

Ingredients

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil Butter can be substituted.
  • ¼ cup all-purpose flour
  • 1-2 cups broth or stock Any broth will work.
  • turkey drippings from pan
  • salt and pepper to taste

Instructions

  • Heat a saucepan or skillet on medium heat. Add the butter and olive oil.
  • When melted, add in the flour. Add it in stages and stir continuously to avoid clumping. This will create a roux, which will thicken the gravy.
  • Add in 1 cup of broth and the turkey drippings from the pan. Stir until the gravy begins to thicken. If the gravy is too thick, add additional broth. Stir (and continue to add broth) until the gravy reaches your desired consistency.
  • Taste repeatedly and add salt and pepper to taste as needed.
