Spring is here and I finally feel like it’s time to come out and play and stop hibernating! It’s not summer yet, though, so a girls’ night in sounds perfect!

Usually, when I host my girls my main focus is on the food and cocktails that will be served. Spring usually ignites my craving for veggies, especially colorful ones!

I’ve partnered with Aunt Nellie’s to bring you guys a green goddess beet salad perfect for the occasion. Aunt Nellie’s beets can be found in supermarkets across the U.S. in the jarred and canned vegetable aisle.

Sliced beets are paired with mixed greens, sliced avocado, almonds, yummy feta cheese, and then tossed in green goddess salad dressing. Aunt Nellie’s saves you time because all of the peeling, cooking, pickling is done for you, without sacrificing

What is Green Goddess Salad Dressing

It’s called green goddess dressing because of its gorgeous rich color. The dressing gets its green color primarily from the parsley and tarragon used in the recipe.

How to Make Green Goddess Salad Dressing

Combine parsley, tarragon, fresh lemon, mayo, sour cream, chives, salt, and pepper in a blender or food processor. Blend for 45 seconds or until creamy.

This salad is incredibly easy to whip up.

Ingredients

  • 2 cups fresh spinach
  • 3 cups fresh mixed greens
  • 1 jar sliced beets
  • 1 avocado sliced
  • 1/4 cup feta cheese
  • 2 tablespoons sliced almonds

Green Goddess Salad Dressing:

  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 1 teaspoon minced garlic
  • 2 tablespoons tarragon
  • 2 tablespoons fresh chives chopped
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  • Puree all of the salad dressing ingredients until smooth.
  • Layer and mix the spinach and mixed greens in a large bowl or on a serving tray.
  • Add the sliced beets, avocado, and feta cheese.
  • Serve with the salad dressing.
