This healthy beet margarita is loaded with veggies, club soda, tequila, and freshly squeezed lime juice. It’s quick and easy to make.
It’s Saturday night and I’m hosting a girls’ night in with my favorite girls! Cocktails are a must for this occasion. I’ve loaded up on sheet masks and I’ve also got our chick flicks lined up! This healthy margarita will pair wonderfully and is one everyone will love!
Most margaritas are loaded with simple syrup, which is essentially sugar and water. This margarita ditches the sugar without compromising on flavor.
Margarita mix just doesn’t taste as good as homemade. I like to make my cocktails from scratch. Especially because they don’t take very long to whip up!
I’ve partnered with Aunt Nellie’s to show you how to use pickled beets for this recipe. Aunt Nellie’s beets can be found in supermarkets across the U.S. in the jarred and canned vegetable aisle. You will use the beet juice from the jar of beets. The juice is loaded with flavor. You can use the actual beets as garnish if you wish.
Aunt Nellie’s saves you time because all of the peeling, cooking, pickling is done for you, without sacrificing flavor.
How to Make a Beet Margarita
You will need a cocktail rimmer, pickled beet juice, tequila, limes, club soda, and ice.
Line the cocktail rimmer with lime and sprinkle salt throughout. Line each margarita glass with the lime and then the salt.
Shake the ingredients in a cocktail shaker and then pour the margarita into the salt-rimmed glasses.
Not only do you avoid excess sugar in this recipe, but it also adds healthy antioxidant-rich, and provide vitamins (like Vitamin A, C and Folate), minerals (like Calcium, Iron, Magnesium, Phosphorus, and Potassium) and fiber to the diet.
And look at that gorgeous color! Your girls with think you rolled out the red carpet for them!
