This dish is the ultimate easy dinner! Simply chop up the veggies. Drizzle all of the ingredients in olive oil and spices and then throw it all in a skillet similar to a stir fry!

Key Recipe Ingredients

An authentic Cajun recipe will always have the Holy Trinity Ingredients: Onion, Bell Pepper, and Celery. We use these as a staple to any dish. Typically, white onions are used, but I used red onions here for an additional pop of color. Feel free to use what you wish.

  • Chicken (Chicken Breasts or Chicken Thighs will work best for this recipe)
  • Andouille Sausage
  • Green Peppers
  • Celery
  • Onions
  • Red Peppers
  • Squash

Feel free to substitute andouille sausage for whatever you like such as chicken sausage, turkey sausage, or bacon. You can also omit it if you wish.

What Type of Chicken to Use

Any boneless chicken will work great like chicken breasts or chicken thighs. I also prefer skinless chicken for this dish. Chicken breasts have less fat than chicken thighs. Chicken thighs will be juicier.

What Type of Sausage to Use

Andouille sausage is used in most classic Cajun and Creole recipes. Sometimes it is labeled as Cajun sausage. Either will work great in this recipe, or use your favorite type.

How to Make Cajun Chicken and Sausage Skillet

Detailed measurements and full instructions can be found in the recipe card at the bottom of this post.

  1. Place the chicken and sausage in a large bowl. Place the chopped veggies in a separate bowl. Drizzle both bowls with olive oil and then season with the seasonings.
  2. Heat a skillet on medium-high heat. 
  3. Add the sausage and chicken to the skillet. Cook for 3-4 minutes or until the chicken is no longer pink.
  4. Remove the chicken and sausage. Add the vegetables to the skillet. Cook for 4-5 minutes until the vegetables are soft.
  5. Add the chicken and sausage back to the skillet.

Is Cajun Seasoning Spicy?

Cajun seasoning is often spicy with an emphasis on peppers, white pepper, black peppers, cayenne pepper, and bell peppers. It also has hints of paprika and garlic. If you are looking for an option that’s less spicy Creole Seasoning may work better for you than Cajun.

Creole Seasoning has more emphasis on herbs such as basil, oregano and thyme. It is milder than Cajun Seasoning. If you want to substitute Creole Seasoning, and you still want the added heat, add in a teaspoon or more of red cayenne pepper.

How Long Will it Last in the Fridge

Store leftovers tightly sealed and covered in the fridge for 3-4 days.

Freezer Tips

You can freeze this dish for up to 3 months tightly covered and sealed. Defrost in the fridge overnight.

  • Cast Iron Skillet
  • Stainless Steel Frying Pan

Ingredients
  

  • 1 tablespoon olive oil
  • 1 skinless chicken breast (half a pound) cut into ½ - 1 inch pieces.
  • 8 oz andouille sausage cut into ½ - 1 inch pieces.
  • 1 cup chopped red bell pepper
  • 1 cup chopped medium green bell pepper
  • 1 cup chopped red onion
  • 1 celery stalk diced
  • 1 cup chopped squash
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon thyme
  • salt and pepper to taste
  • 1 teaspoon cayenne pepper optional

Instructions
 

  • Place the chicken and sausage in a large bowl. Place the chopped veggies in a separate bowl. Drizzle both bowls with olive oil and then season with the seasonings.
  • Heat a skillet on medium-high heat. 
  • Add the sausage and chicken to the skillet. Cook for 3-4 minutes or until the chicken is no longer pink.
  • Remove the chicken and sausage. Add the vegetables to the skillet. Cook for 4-5 minutes until the vegetables are soft.
  • Add the chicken and sausage back to the skillet. 
  • Serve!

    After a long week, this was the perfect, healthy one pot meal to end the week off right! Full of veggies (which my doctor will appreciate) and ready in 25 minutes was everything I needed. Flavor was amazing and I've got plenty of leftovers to last through the weekend. Def adding this to my rotation.

    This was a quick and easy meal. I love the pop of heat and I loved the incorporation of some of my fave veggies. I choose to use chicken sausage instead along with chicken breast and it was still delicious.
