I have heard a lot about shirataki noodles and more specifically, the Miracle Noodles brand. For years, I have said I would try them out and I'm finally getting around to doing that. I whipped up my infamous Alfredo sauce recipe, added chicken and green veggies.

Carbs in this Alfredo Recipe

Yes, alfredo sauce is low carb if you prepare it yourself. Many store-bought alfredo brands are loaded with added sugar. The ingredients in this recipe result in 3 net carbs (just for the alfredo sauce) per serving.

How to Make Alfredo Sauce with Heavy Whipping Cream

I like to add cream cheese to my alfredo sauce. You can totally omit it if you wish. I add cream cheese for additional flavor. It also helps add a little additional fat for keto macros.

  1. Melt butter in a skillet.
  2. Allow the butter to melt and then add heavy whipping cream, cream cheese, shredded parmesan reggiano, and salt and pepper to taste.
  3. Stir continuously until the cheese has melted.cooked miracle noodles and keto chicken alfredo with broccoli and spinach in a skillet

Can I Eat Noodles on Keto?

You cannot have regular noodles with carbs. My favorite substitutes are these noodles, zucchini noodles, and spaghetti squash.

Are the Noodles Good For You?

The nutritional information alone supports that these noodles make a great alternative to your typical starchy noodles.

What are Shirataki Noodles Made of? Where Can I Get Them?

The noodles are made of Konjac flour, water, and lime water. Konjac flour is a fiber that comes from the Konjac plant. The Konjac flour can you help to improve digestive and is good for the intestine.

The fiber also makes you feel fuller longer. The noodles are vegan and gluten-free. You can find the noodles here on Amazon.

What Do the Noodles Taste Like?

They don't have much taste. The noodles will carry the taste of the dish that you pair them with. In this case, alfredo sauce. There is a very noticeable TEXTURE. The texture is very slick, and could be described as rubbery. They don't taste anything like rubber, but the texture is very on par.

What's the verdict? Did I enjoy the noodles. I think they are ok. I prefer zucchini noodles and spaghetti squash to the miracle noodles. However, the miracle noodles aren't bad. This exact recipe can be made with zoodles or spaghetti squash. Check out my tips on how to prepare those veggies in these blog posts: Keto Low-Carb Spaghetti Squash Chicken Alfredo and Zucchini Noodle Shrimp Alfredo.
