Beef teriyaki is one of those meals that tastes like takeout, but honestly better because the beef actually tastes seasoned. The sauce is sweet, savory, sticky, and perfect over rice, while the steak stays tender instead of chewy. I’ve been sharing easy comfort food recipes online for a decade, and one thing about me, I’m gonna make sure weeknight dinners are easy without tasting boring.

Beef Teriyaki Ingredients

  • Olive Oil
  • Flank Steak: Flank steak works great because it’s lean, packed with beefy flavor, and gets really tender when sliced thin against the grain. Sirloin is another solid option if you want something lean and tender. Skirt steak has even more bold flavor, while ribeye gives you a richer, more buttery bite thanks to the marbling. Strip steak also works well and stays tender when sliced into thin strips. Honestly, use whatever steak you like best.
  • Fresh or Frozen Mixed Vegetables: You can totally use your favorite vegetables or whatever you like in this recipe. I like to grab a package of fresh mixed vegetables so there is a nice variety. You can also use frozen vegetables. Frozen veggies will usually emit excess water in the pan as the vegetables cook. Be sure to drain the excess water to prevent a soggy meal. In general, I have better luck with fresh vegetables or thawed frozen vegetables when preparing a stir fry.

How to Make Beef Teriyaki Stir Fry

Detailed measurements and full instructions can be found in the recipe card at the bottom of this post.

  1. Add soy sauce, rice vinegar, ginger, garlic, and brown sugar or sweetener to a bowl and stir. Set aside.
  2. Heat a skillet on medium-high heat with olive oil. When hot, add the steak, salt, and pepper to taste.
  3. Cook and flip the steak and cook until the steak has browned. Remove the steak from the pan and set it aside.
  4. Add vegetables to the pan and cook.
  5. Add the cooked steak back to the pan along with the stir fry sauce. Stir and cook.

Frequently Asked Questions and Recipe Pro Tips

What type of pan works best to use?

I recommend a cast-iron skillet or stainless steel pan because those will get really hot and are perfect for searing meat and vegetables, compared to a non-stick pan. I also use a large 12-inch cast iron pan for this recipe. You don't want to overcrowd the pan with meat or vegetables while cooking. You will run into trouble getting the perfect sear if you do this. Cook in batches if necessary.

What cut of beef works best for beef teriyaki?

Flank steak, sirloin, skirt steak, ribeye, or strip steak all work well. Slice the beef thin against the grain so it stays tender.

How do I keep the beef tender?

Don’t overcook it and make sure you slice it thin against the grain. Cooking it quickly over high heat helps keep it juicy.

Can I use store-bought teriyaki sauce?

Yep. Homemade usually has better flavor and lets you control the sweetness, but store-bought works if you need a shortcut.

How do I thicken teriyaki sauce?

A cornstarch slurry works best. Mix cornstarch with cold water first, then stir it into the sauce while it simmers.

Why is my teriyaki sauce too salty?

Teriyaki sauce is soy sauce based, so using low sodium soy sauce helps balance things out.

Can I make this ahead of time?

Yes. Beef teriyaki reheats really well, which makes it great for meal prep.

How to Reheat

You can reheat it on the stove at medium heat until warm. You can use the microwave using 30 second intervals to avoid
overcooking the meat, which will result in dry and tough meat.

You can also use the oven and reheat the dish at 300 degrees until warm.

How to Store

The dish can be stored tightly covered and sealed for 3-4 days.

Freezer Tips

You can freeze the dish tightly covered and sealed for 2-3 months. Defrost in the fridge overnight.

How do I keep the beef from getting chewy?

Overcooked beef gets tough fast. Cook it quickly over high heat and remove it from the pan once it’s done.

This meal came together quickly. I used the stir fry mix from Traders Joes to make it even easier. I love that the sauce is not super salty like other stir fry recipes I have made.
