This Buffalo Chicken Dip is made with tender rotisserie chicken, bold Buffalo sauce and ranch seasoning, plus a rich blend of melted cheese. The best part? It’s insanely easy to make! With just a few simple ingredients and minimal prep, you’ll have a cheesy, ultra-creamy dip ready to devour in no time. Serve it up with tortilla chips, celery sticks, or toasted baguette slices—but be warned, it disappears fast!

What Type of Chicken to Use

  • Rotisserie Chicken (Best Choice)
    • Why? It’s already cooked, juicy, and packed with flavor, making prep super easy.
    • What to use? Shred both the breast and thigh meat for a mix of lean and tender bites.
  • Chicken Thighs (Juiciest Option)
    • Why? Thighs have more fat, making the dip extra rich and flavorful.
    • How to prep? Cook and shred boneless, skinless thighs before mixing into the dip.
  • Chicken Breasts (Leanest Option)
    • Why? If you prefer a lighter dip, shredded chicken breast is a great choice.
    • Tip: Be sure to mix it well with the buffalo sauce to keep it from drying out.
  • Canned Chicken (I have never used this.)
    • I don't have personal experience here, but if you use it, be sure you have drained it well.

What Type of Buffalo Sauce to Use

Frank’s RedHot Original is the classic choice, but you can use any mild, medium, or extra spicy sauce depending on your heat preference.

What Type of Cheese to Use

Cheddar is standard and easy to find. I love a good cheese pull when it comes to dip so I also added in mozzarella. Gruyere is another favorite because it makes it really creamy. Any cheese will work. If you love smoky flavor, add smoked gouda!

✔ Use freshly shredded cheese – Pre-shredded cheese has anti-caking agents that prevent smooth melting.
✔ Mix in cream cheese – This makes the dip extra creamy and balances the heat.
✔ Layer cheese on top before baking – A golden, bubbly top makes it even better!

How to Make Rotisserie Buffalo Chicken Dip

Detailed measurements and full instructions can be found in the recipe card at the bottom of this post.

  1. Season the chicken with ranch seasoning.
  2. Combine all of the ingredients (only add half of the grated cheese during the step) and stir to mix well. Add the mixture to a 9×13 inch baking dish or a 10-12 inch oven safe pan.
  3. Sprinkle the remaining cheese on top.
  4. Bake until the cheese is bubbly.
  5. Cool before serving.

How to Make it Creamy

Use room temperature cream cheese. It's easier to mix and has a smooth texture. At room temp, it melts smoothly into the dip, creating a creamy, velvety texture.

Cold cream cheese is stiff and lumpy, making it hard to blend evenly. Cold cream cheese doesn’t incorporate well with buffalo sauce, chicken, and cheese.

How to Make it Dairy Free

Use dairy-free cream cheese, shredded vegan cheese, or dairy-free ranch dressing substitute.

How to Substitute Cream Cheese

Plain Greek yogurt or sour cream can be substituted at a 1:1 ratio. You can also use full-fat coconut cream (not coconut milk). Coconut cream is a thicker coconut product, made from blended more coconut meat and less water than coconut milk. You can start with equal parts and add more if you feel it's necessary.

How to Turn this Dip into a Meal

Use it as a filling for buffalo chicken sliders, tacos, quesadillas, or stuffed baked potatoes.

Can I Make it Ahead/How to Store

Yes you can assemble it in advance. Store it in the fridge, and bake when ready.

It stays fresh for 3-4 days in an airtight container.

How to Reheat

Microwave in 30-second intervals, stirring in between, or bake at 350°F (175°C) for 10-15 minutes.

Freezer Tips

You can freeze the dip, but since it's served creamy, expect the texture to change when you thaw and reheat it. You will also notice separation. Freeze for up to 3 months, thaw overnight in the fridge. then reheat in the oven or stovetop, stirring well.

Ingredients
  

  • 20 oz cooked chicken
  • 2-3 teaspoons Ranch Seasoning 1 ½ teaspoons to season the chicken and 1- 1 ½ teaspoons to season the dip.
  • 8 oz cream cheese Softened at room temperature. Diced into chunks to make it easier to incorporate.
  • ½ cup Ranch Dressing
  • 1 cup Buffalo sauce
  • 2-3 cups grated cheese I use 1 ½ cups of cheddar and 1 ½ cups of mozzarella or gruyere cheese.
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 350 degrees.
  • Season the chicken with 1 - 1 ½ teaspoons of ranch seasoning.
  • Combine all of the ingredients (only add half of the grated cheese during the step) and stir to mix well. Add the mixture to a 9x13 inch baking dish or a 10-12 inch oven safe pan.
  • Sprinkle the remaining cheese on top.
  • Bake for 15-20 minutes until the cheese is bubbly.
  • From there I like to broil it for 3-5 minutes to get a bubbly crisp topping.
  • Cool before serving.

Notes

If you don't like ranch, omit it. You can omit it completely or use any of your favorite flavors, like blue cheese.
Use any of your favorite cheese. You can also just use only cheddar.
