I don’t play about flavor, and these taco egg rolls deliver every time. Think juicy, well-seasoned taco filling, plenty of cheese, and that crispy shell that actually stays crisp. As someone who’s been in the air fryer game since the beginning, I’m giving you options to get that crunch without babysitting a pot of oil. You can bake these, too! All that taco flavor wrapped up tight so nothing falls apart on you. If you’ve ever had soggy or bland egg rolls, this right here fixes that.
Add the ground beef to a skillet on medium high heat along with the salt, pepper, and the taco seasoning. Cook until browned while breaking the beef into smaller chunks.
Once the meat as started to brown add the chopped onions and garlic. Cook until the onions become fragrant.
Add the diced tomatoes and chilis, Mexican cheese, beans, and corn. Stir to ensure the mixture is combined.
Lay the egg roll wrappers on a flat surface. Dip a cooking brush in water. Glaze each of the egg roll wrappers with the wet brush along the edges. This will soften the crust and make it easier to roll.
Load 2 tablespoons of the mixture into each of the wrappers. Do not overstuff. Depending on the brand of egg roll wrappers you use, you may need to double wrap the egg rolls.
Fold the wrappers diagonally to close. Press firmly on the area with the filling, cup it to secure it in place. Fold in the left and right sides as triangles. Fold the final layer over the top to close. Use the cooking brush to wet the area and secure it in place.
Air Fry: Lightly spray the egg rolls with oil. Place them in a single layer in the basket, don’t overcrowd. Air fry for 8 minutes at 400 degrees. Flip the egg rolls. Cook for an additional 4 minutes or until browned and crisp.
Bake: Preheat oven to 370 degrees. Place the egg rolls on a lined baking sheet or wire rack. Lightly spray or brush with oil. Bake for 12–15 minutes, flipping halfway through, until crispy and golden. Broil for 1–2 minutes at the end if you want extra crisp, keep an eye on them.

If you choose not to make your own seasoning, you can ½ packet of store-bought taco seasoning.Use your judgment to determine how long you should cook these in the Air Fryer. You will want to ensure both sides are golden brown. Cooking time may vary depending on the Air Fryer brand used.
