20-Minute Low-Carb One Sheet Pan Shrimp Fajitas is a quick and easy, keto, healthy, and low-calorie weeknight dinner recipe.
- 1 1/2 pounds pounds of raw shrimp peeled and deveined
- 1/4 red onion sliced
- 1 yellow pepper sliced
- 1 red pepper sliced
- 2-3 garlic cloves chopped
- 1 tbsp olive oil
- 2 tbsp cilantro chopped
- 1 lime sliced into 4 portions
- 1 tsp chili powder
- 1/2 tsp cumin
- Trader Joe's Taco Seasoning to taste
- salt and pepper to taste
Preheat oven to 425 degrees.
Place the shrimp, cilantro, and veggies in a medium-sized bowl.
Coat with olive oil.
Sprinkle the seasonings throughout.
Line a baking pan with foil. Spray with cooking spray.
Spread the contents evenly throughout the pan.
Bake for 8 minutes.
Broil for 2 minutes.
Remove from the oven. Squeeze fresh lime juice throughout.
