Grilled Steak Carne Asada Nachos

Grilled Steak Carne Asada Nachos are juicy and loaded with Greek yogurt, cheese, guac and cilantro perfect appetizer for parties, tailgates, and game day.

Ingredients

  • 10 oz sirloin steak
  • 7 servings Multigrain Tortilla Chips I used Trader Joe's Quinoa and Black Bean Tortilla Chips
  • 1 8 oz can Rotel
  • ½ 8 oz can Trader Joe’s Fat Free Refried Black Beans
  • 1 cup cilantro chopped
  • 3 garlic cloves minced
  • 1 cup medium onion chopped
  • ¼ pack Taco Seasoning I used Trader Joe's
  • 3/4 cup Reduced Fat Mexican Cheese shredded
  • 1/4 cup part-skim mozzarella cheese shredded
  • ½ lime juice of

Steak Marinade

Instructions

  • Wash and trim any fat from the steak, pat dry.
  • Combine the seasonings in a bowl. Sprinkle the seasonings on both sides of the steak.
  • Place the steak in a Ziploc bag. Seal the bag, removing all air. Place in fridge to marinate for at least 30 minutes (preferably overnight).
  • Grill steak to preferred doneness (i.e. medium).
  • Slice the steak into small pieces.
  • Heat a skillet on medium heat. Add the garlic and onions. Cook until fragrant.
  • Add the remaining taco seasoning, grilled steak, black beans, and Rotel. Cook on low heat for 3-5 minutes.
  • Squeeze fresh lime juice over the skillet and stir.
  • Spread the chips over a plate. Top the chips with the steak mixture. Sprinkle the cilantro, cheese, and any desired toppings over the steak.

Notes

Cooking time does not include time to marinate if marinating is performed.
