  • Preheat oven to 350 degrees.
  • Using a cheese grater, grate and shred the zucchini into smaller bits. Place the zucchini on a paper towel. Sprinkle salt throughout. This will allow the zucchini to sweat out excess moisture. I let the zucchini sit for 30 minutes to release moisture.
  • Add the eggs, olive oil, and vanilla to a medium-large bowl and whisk.
  • Squeeze the excess liquid out of the shredded zucchini. Add the zucchini and ginger to the eggs and olive oil. Stir.
  • Add the almond flour, baking powder, granular sweetener, cinnamon, nutmeg, and salt to a mixing bowl and stir.
  • Add the zucchini and egg mixture to the dry ingredients in the mixing bowl.
  • Use a hand mixer and blend until fully incorporated.
  • Spoon the bread batter into the loaf pan. Smooth the top of the batter.
  • Sprinkle the walnuts throughout the top.
  • Bake for 60-65 minutes until you can insert a toothpick and it returns clean.
  • Cool for 10 minutes before slicing.

Notes

  • I only needed to use 1 large zucchini to gather 1 cup. The amount of zucchini you will need will vary based on size.
  • You can fold in Lily's Low Carb Chocolate Chips with the nuts or instead of nuts if you like.
  • Squeezing the water from the zucchini is really important. You will end up with soggy bread if you don't do this.
  • Zucchini is a veggie that is filled with a lot of water. You will not be able to remove all of the water and moisture, but following the steps above, will remove most.
  • For additional flavor you can add lemon zest.
  • Almond butter, peanut butter, cream cheese, and grass fed butter make great toppings for zucchini bread.
