Cut the potatoes into roughly equal-sized pieces, then boil in salt water until fork tender.
Once cooked, drain the water from the potatoes and place in a bowl to cool.
Cook the bacon and chop into small pieces.
To the bowl, add the bacon, diced eggs, mayo, mustard, relish, onions, all of the spices, and salt and pepper. Taste repeatedly.
Stir to combine, then cover and chill for at least an hour to two hours before serving.
