Ingredients

  • 1 pound skinless chicken breasts
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1 tablespoon dijon mustard
  • 3 garlic cloves
  • ½ cup chopped onions
  • ½ cup sliced mushrooms
  • 4 oz cream cheese
  • ½ cup dry white wine Optional, see notes. I used Pinot Grigio.
  • 10 oz wide egg noodles

Instructions

Homemade Cream of Chicken Soup (Feel free to use a 15oz can if you wish)

  • Add the chicken broth to a saucepan on medium-high heat. Bring to a boil.
  • Combine the flour, milk, and seasonings in a separate bowl. Stir until the flour is combined.
  • Slowly add the mixture to the pot with the broth. Stir.
  • Lower the heat to medium low and cook until the mixture thickens, about 6-10 minutes.

Chicken Stroganoff

  • Add the chicken, chicken broth, cream of chicken, paprika, Dijon mustard, garlic, onions, and mushrooms to the slow cooker.
  • Stir. Cook on High for 3-4 hours or Low for 7-8 hours.
  • Open the slow cooker and shred the chicken.
  • Add the cream cheese and white wine. Stir until melted.
  • Serve over egg noodles or side dish of choice.

Notes

  • I like to use skinless chicken breasts. You can also use boneless chicken thighs or any type of chicken you prefer. The cook time will remain the same. If you use fully cooked rotisserie chicken you can make this dish on the stove. Combine all of the ingredients and cook until warm.
     
  • Cream cheese is optional and used to thicken the sauce and for extra flavor. You can substitute with 1/2 cup of plain Greek yogurt or sour cream if you wish, the taste won't be as comparable. The dish is traditionally made with sour cream.
  • If you don’t wish to use the wine you can omit it. No substitute is necessary. It's used for added flavor.
  • The dish is traditionally made with Dijon mustard. If you don't like it, feel free to omit it or add it at the end. That way you can start with a small amount and adjust to suit your taste.
