Leftover Turkey Nachos

These Leftover Turkey Nachos are perfect if you have remaining food from Thanksgiving and you want to put it to use in a dish that isn't boring! Mix and add all of your favorite nacho toppings.

Equipment

Ingredients

  • Tortilla Chips I use 15-17 large chips. You will need enough to fit your sheet pan.
  • 2 cups cooked turkey Sliced into cubes or shredded
  • 15 oz canned diced tomatoes and chilies drained
  • 15 oz canned black beans drained
  • 1/2 cup chopped onions
  • 1/2 cup sliced black olives
  • 1 1/4 cups shredded cheese I used 1 cup cheddar and 1/4 cup mozzarella.
  • 1/4 cup shredded pepper jack cheese Can substitute whatever you wish.

Homemade Taco Seasoning

Optional Toppings

  • salsa
  • Greek yogurt or sour cream
  • Guacamole
  • Jalapenos
  • Cilantro

Instructions

  • Preheat oven to Low Broil.
  • Spread enough tortillas that will fit into the bottom of a sheet pan. I use 15-17 large chips. You will need enough to fit your sheet pan. (I use half sheet.)
  • Combine the cooked turkey, black beans, diced tomatoes and chilies, onions, sliced olives and Taco Seasoning in a large bowl. Stir and spread over the tortilla chips.
  • Sprinkle the cheese throughout.
  • Broil for 4-6 minutes or until the cheese has melted.

Notes

Substitute and add whatever toppings you like. These are your nachos.
If using a taco seasoning packet, I would start 1/2 of the pack and adjust as needed.
You can use whatever cut of turkey you wish. White or dark meat will work fine.
If your oven doesn't have a low broil option, try 450 degrees.
