Ingredients

  • 1 teaspoon olive oil
  • 1 cup chopped onion
  • 1/2 cup chopped red pepper
  • 1/2 cup chopped green pepper
  • 2 garlic cloves Minced
  • 1 cup broth Turkey, chicken, or vegetable.
  • 4 cups cooked turkey meat
  • 1 16 oz can kidney beans drained
  • 1 16 oz can black beans drained
  • 1 16 oz can petite diced tomatoes
  • 1 8 oz can tomato sauce

Instructions

  • Place a Dutch oven or soup pot on medium-high heat. Add the olive oil, onions, and peppers. Saute for 3-4 minutes until translucent and fragrant.
  • Add in the garlic and stir.
  • Add in all of the remaining ingredients and stir. Lower the heat to medium-low and cover.
  • Simmer for 20-25 minutes or until the soup is warm and the turkey is tender.

Notes

Instead of making your own chili seasoning, you can use a chili packet if you wish. I would start with 1/2 of the pack and adjust as necessary.
