Equipment

Ingredients

Wet Ingredients

  • 2 tablespoons unsalted butter (melted)
  • 2 eggs (beaten)
  • 2 oz cream cheese (softened)
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla

Dry Ingredients

Glaze Ingredients

Other

  • cooking oil (olive or coconut)

Instructions

Mixing and Assembly

  • Preheat oven to 350 degrees.
  • Spray donut pan with cooking oil. I like to use olive oil or coconut oil.
  • Combine all of the wet ingredients in a mixing bowl and stir. If you have trouble getting the cream cheese to soften up, use a hand mixer for about 20-30 seconds.
  • Combine the dry ingredients in a separate small bowl and stir. Add the dry ingredients to the wet ingredients. Stir well to combine.
  • Spoon the mixture evenly throughout the donut pan. The batter will make 6 donuts.
  • Bake the donuts for 20-25 minutes until golden brown. Mine took about 22 minutes. While the donuts bake, make the glaze.

Frosted Glaze

  • Combine the whipping cream, confectioner's sweetener, and vanilla in a small bowl. Mix until combined and glaze forms.

Cooling and Frosting

  • Remove the donuts from the oven and allow them to cool in the pan for about 5 minutes.
  • Remove the donuts from the donut pan and place them on a cooling rack for at least 10 minutes.
  • Frost the donuts with the glaze. Make sure the donuts have completely cooled and handle the donuts with a light hand to prevent them from breaking as you frost.

Notes

These donuts are a sweet treat, so if you aren't fond of sweet desserts, start with 1/2 of the amount listed above for the frosted glaze. Test it out and decide if you want more glaze.
